October 22, 2026 · Tomball, TX Old Town Tomball is brewing on Market Street again. Southern Oak Brewing opened on October 7 at 308 Market Street, the former Fire Ant brewpub space, bringing house-made beer and a chef-driven kitchen back to the block. Southern Oak is a partnership between Kendra and Josh Schwaiger, who co-own Paradigm Brewing Company, and Tatia and Doug George, who own Graze on North Elm. Doug spent 37 years as a corporate chef with ClubCorp, and Josh came up through the beverage business before Paradigm. "We have been friends for some time now and have always talked about partnering," Josh told Hello Woodlands. "When the opportunity came up, we jumped on it." The brewpub brews on site and has a wall of 28 taps, with guest beers pouring alongside the house lineup. Early house beers include Southern Oak London Ale, Southern Oak Italian Pils, and West Coast Brew, plus wine, cider, seltzer, and non-alcoholic options. The space takes in the adjoining 310 storefront, giving Southern Oak a patio and a balcony over Market Street. Josh is betting on the wings and the egg rolls as signature dishes, though he says not to sleep on the shepherd's pie or the bison burger. Southern Oak is open Tuesday through Thursday from 11 a.m. to 9 p.m., Friday and Saturday from 11 a.m. to 10 p.m., and Sunday from 11 a.m. to 7 p.m. It is closed Mondays. A brewer and a chef from the same town now share one kitchen and one tap wall, and Old Town Tomball has a brewpub at 308 Market once more.
